A chemical transition element which plays a central role in vital biochemical pathways, the primary function of iron involves oxygen transport within blood and muscle.


BIOLOGICAL FUNCTION & EFFECT:

• iron picks up the oxygen in the lungs where the concentration is high and transports it to tissues, releasing it where needed

• myoglobin is an iron-containing protein in msucles that accepts oxygen and stores it

• iron is necessary for optimal immune response

• plays an essential role in metabolism of fatty acids

• is a part of the enzymes that initiates the synthesis of the neurotransmitters, serotonin and dopamine


• EFFECTS OF DEPLETION

• anemia
• weakness
• fatigue
• skin pallor
• headache
• hair loss
• labored breathing upon exertion
• spooning of fingernails
• brittle nails
• susceptibility to infection


• SOURCES

Liver is the richest source of iron. Other sources include other organ meats, fish, poultry, dried beans and vegetables, dried fruits, nuts, whole grain breads and cereals.
